A True Comforting Classic — Chili con Carne
Kai Kodasma

Chili con Carne

An easy one-pot chili con carne that only gets better the longer it sits.
Prep Time 15 minutes
Cook Time 1 hour 10 minutes
Total Time 1 hour 25 minutes
Servings: 6 servings

Ingredients

  • 2 tbsp coconut oil
  • 1 large onion
  • 1 red chili
  • 3 cloves garlic
  • 1 tsp chili flakes
  • 3 tsp salt
  • 1 tsp black pepper
  • 1 tsp ground paprika
  • 2 tsp cumin
  • 600 g minced beef
  • 300 ml beef broth
  • 800 g tin tomatoes
  • 1 cinnamon stick
  • 1 piece of dark chocolate
  • 400 g tin sweet corn
  • 3 carrots
  • 1 paprika (bell pepper)
  • 400 g kidney beans

Method

  1. Heat the coconut oil in a large pot over medium heat and add the chopped onion. Halve and chop the chili (leave the seeds for more heat). Crush and mince the garlic, then add the garlic and chili to the pot with the chili flakes, salt, black pepper, ground paprika and cumin. Let brown for 5 minutes.
  2. Increase the heat and add the minced beef, seasoning with salt and pepper. Brown it, then add the broth, crushed tomatoes, cinnamon stick, square of dark chocolate, sweet corn, grated carrots and chopped paprika. Bring to a bubble, reduce to medium and simmer for 60 minutes, stirring now and then. Add a little water if it gets too thick.
  3. Add the kidney beans and simmer for another 10 minutes on low heat. Season to taste and serve with basmati rice and fresh coriander.

Notes

Even better the next day — the spices deepen overnight. Great with nachos, too.
