Matcha Ice Cream & Chocolate Syrup

Dairy-free, no-white-sugar matcha ice cream from four ingredients, with a devious little chocolate syrup.
Prep Time 15 minutes
Cook Time 5 minutes
Freezing 1 day
Total Time 1 day 20 minutes
Servings: 4 servings

Ingredients

Matcha ice cream
  • 3 frozen bananas
  • 1 tsp matcha powder (I used culinary matcha from Üks Väga Hea Tee)
  • 1-3 tbsp maple syrup (depending on how big a sweet tooth you have)
  • 100 ml oat milk or any other subtle-tasting plant-based drink
Chocolate syrup
  • 64 g sugar
  • 64 g good-quality dark chocolate powder (I used Üks Väga Hea Tee dark chocolate powder)
  • 1/2 tsp Himalayan salt
  • 64 ml cold water
  • 1 tsp pure vanilla

Method

Matcha ice cream
  1. Prep the bananas at least a day ahead. I recommend peeling them, cutting them into small pieces, putting the pieces into plastic bag(s) and popping them into the freezer — that way the bananas freeze quicker and are easier to blend.
  2. When the bananas are frozen, take them out and put them into a blender or food processor.
  3. Add the matcha, maple syrup and plant milk. Blend until the mixture is smooth.
  4. Taste the mixture to make sure it's sweet enough for you.
  5. Put the mixture into a plastic container, smooth the surface and seal. Freeze for 24 hours.
Chocolate syrup
  1. In a saucepan over medium heat, whisk together the chocolate powder and sugar until the sugar has melted and blended with the chocolate powder.
  2. Add the water and Himalayan salt. Continue whisking to make sure nothing gets stuck on the bottom.
  3. Boil for 3–4 minutes while mixing.
  4. Take it off the heat, stir in the vanilla and let it cool. The syrup will still be quite thin, but it thickens up as it cools.
  5. Put it into a jar and store in the refrigerator.
