Spiced Pumpkin Bread

We’re suddenly in the middle of pumpkin season, which means lots of pumpkin recipes! This pumpkin bread was inspired by the kind my late grandma used to make on weekends — usually with carrots or chocolate, baked in a wood oven. Very old-school, and so delicious it was gone before it even cooled.

It’s a very simple recipe and any kind of pumpkin works. The only thing to watch is how much moisture the pumpkin gives off, which affects the baking time. I’ll admit I’ve been quietly baking this for a while and it’s been a hit every time — even the kids love it. So get your bread tin out and let’s bake.

Spiced Pumpkin Bread

A moist, simple pumpkin bread inspired by grandma’s weekend baking.
Prep Time 15 minutes
Cook Time 50 minutes
Total Time 1 hour 5 minutes
Servings: 1 loaf

Ingredients

  • 350 g Muscat pumpkin, grated
  • 3 eggs, lightly beaten
  • 70 ml extra virgin olive oil
  • 70 g sugar
  • 1.5 tsp Himalayan salt
  • 255 g flour
  • 100 g wholemeal flour
  • 2 tsp baking powder
  • 100 g pumpkin seeds

Method

  1. Preheat the oven to 180°C and prepare a bread tin (I use 9×30 cm) with butter or a sheet of parchment.
  2. In a large bowl mix together the grated pumpkin, eggs, olive oil, sugar and salt.
  3. Add both flours, the baking powder and pumpkin seeds. Mix, making sure no unmixed flour is left at the bottom of the bowl.
  4. Pour the batter into the tin and bake for about 50 minutes. Test with a clean knife — if it comes out clean, you’re good.
  5. Let the bread cool on a rack. Enjoy with butter and an extra dash of Himalayan salt.
